Armenian Lahmacun

1.5 lbs extra lean ground beef
2 cloves garlic, minced
1 shallot, minced
1 bunch fresh parsley, half chopped, half plucked (for serving)
1 tsp ground allspice
1 tsp smoked paprika
1/2 tsp ground cinnamon
3 tbsp tomato paste
1/2 tsp cayenne pepper
1/2 tsp salt
1/2 tsp ground cummin
1 lemon, cut into wedges (for serving)
2 tbsp extra virgin olive oil
4 large flour tortillas, or same-shaped fresh pizza dough, thinly rolled

Serves Four     Total Time: 35 minutes


Preheat the oven to 450 degrees Fahrenheit. In a large bowl combine the meat and spices. Mix thoroughly.


Cover a cooking tray with parchment paper, spread out the four bases, and spread the mixture evenly onto each in one thin layer.


Bake for about 6 minutes or until the outside of the dough begins to brown. Serve hot with the lemon and plucked parsley.
