6 ounces semi-sweet chocolate chips
1/4 stick of unsalted butter (can put up to 1/2)
3 large eggs
3 tbsp sugar
2 tbsp flour
1 tbsp vanilla extract or seeds from a vanilla bean
Some powdered sugar
Hint of cinnamon
Jelly or candied mint (optional)
Makes Two Total Time: 35 minutes
Preheat oven to 370 degrees Fahrenheit. Creat a heat bath at 110 degrees Fahrenheit. Place chocolate in bath, stirring as it begins to melt. Once melted, remove chocolate from heat, and stir in butter until fully melted.
In a seperate bowl, whisk together eggs, sugar and vanilla. Then very slowly add in chocolate mixture, stirring continuously. Finally stir in flour slowly, until you get a sticky cohesive mixture.
Butter and sugar two ramekins. Fill each ramekin with the mixture until about 3/4 full. Place ramekins in oven for exactly 10 minutes, or just until top of cake looks solid. Don't open oven while baking.
Finally flip ramekins on plates, add powdered sugar and cinammon, and serve immediately. Chocolate should slowly flow out from the middle when the cake is cut.
Can serve with favorite ice cream.
