South African Malva Pudding

Pudding
2 eggs
6 tbsp sugar
1 tsp baking powder
1/2 tsp salt
2 tbsp jam (I use blood orange)
1 tbsp butter
1/2 cup milk
1 cup flour
1 tsp white vinegar

Sauce
1 tbsp butter
4 tbsp sugar
2 tsp vanilla
1/2 cup heavy cream

Serves Two       Total Time: 45 minutes

Pudding
Preheat oven to 330 degrees Fahrenheit. Grease an oven dish thoroughly with butter. Melt the butter. Beat the sugar, eggs and jam together for several minutes. Add in vinegar, melted butter, salt, and baking powder, stirring continuously. Slowly add in flour and continue to beat. Pour in oven dish and bake for 35 minutes, or until top is brown but not burnt.

Sauce
Melt together all sauce ingredients in pot. Pour hot over the pudding as soon as it comes out of oven.
