Ingredients
Meatballs
1 lb lean ground beef
1 lb ground pork
2 large eggs
1 white onion, finely diced
1 cup milk
1 cup breadcrumbs
1 tsp salt
1 tsp pepper
1/2 tsp nutmeg
Gravy
3 tbsp butter
4 cups beef stock
1/2 cup heavy cream
1/2 tsp nutmeg
4 tbsp all-purpose flour
1/4 tsp cayenne pepper
Mashed Potatoes
2 lbs potatoes, peeled
1 cup heavy cream
1/2 tsp nutmeg
1 tbsp butter
Serve with lingonberry jam and fresh parsley
Serves Six Total Time: 11⁄2 hours
Preheat oven to 400 degrees. Lighly beat the two eggs, then mix in the breadcrumbs, white onion, milk and spices. Let sit for 5 minutes, then stir in the meat. Mix thoroughly
then shape into 1-inch balls.
Lightly grease a baking dish and spread out the meatballs. Bake for 20 minutes or until browned.
Add the butter to a pan over low heat. Once melted stir in the flour. Slowly add beef broth and continue to cook until sauce is thickened. Then stir in
the heavy cream.
Boil the potatoes until fork goes through easily.
Drain the water and add the heavy cream, butter and nutmeg to the pot, then mash until smooth. Add salt and pepper to taste.
