1.5 lbs beef round, cut into strips
1 medium brown onion, sliced
2 trays portobello mushrooms, sliced
3 shots whiskey
1 cup beef stock
6 oz sour cream
1 bunch of parsley, roughly chopped
2 tbsp dijon mustard
1 bay leaf
1 tbsp butter
1 tbsp olive oil
Cooked egg noodles or mashed potatoes
Serves Four Total Time: 35 minutes
In a large skillet heat the butter on medium-low heat. Add in the onion and mushrooms and cook for 8 minutes. Set aside contents, add in oil, raise heat slightly and fry the meat for about 3 minutes. Then add in the whiskey. About a minute later add in the beef stock, bay leaf, mustard, salt and pepper. Stir and cook for about 5 minutes. Add mushroom and onions back in and cook for 3 more minutes. Finally lower heat and stir in parsley and sour cream. Serve with egg noodles or mashed potatoes. Dill pickles and dark bread are also commonly eaten alongside.
