Ingredients
2 large white onions, chopped
2 inch ginger root, minced
5 cloves garlic, minced
4 tbsp unsalted butter
3 tbsp berbere spice
1.5 lbs beef sirloin, cut into 1-inch cubes
2 tsp lemon juice
1 tsp canola oil
Serve with fresh injera
Serves Four Total Time: 45 minutes
In a large pan over medium-low heat, melt the butter, then add the onions, berbere, garlic and ginger.
Cook for at least 30 minutes, only stirring every few minutes, until the onions are golden in color.
Then blend the mixture to a puree and return to the pan. Season and keep warm.
Generously season the beef with salt and pepper. Add canola oil to a cast iron skillet over medium-high heat
and wait until smoking. Then add the beef in batches, searing for about two minutes on each side. After all the beef is
cooked, add to the beef to the sauce, squeeze in lemon juice and serve on warm injera.
