Lebanese Za'atar Man'ouche

3 cups all purpose flour
1  1/3 cups olive oil
9 tbsp za'atar mix, or make your own
2 tsp yeast

Serves Four     Total Time: 55 minutes
Mix together the flour, yeast and 2 tsp salt in a large mixing bowl, then make a well in the center and pour in 1/3 cup olive oil and 2/3 cup warm water. Push the flour mixture into the center and combine the dough until it is cohesive and no longer sticky. Cover the bowl with a towel and let it sit for at least 30 minutes. Meanwhile preheat the oven to 400 degrees Fahrenheit.
Cut the dough into four equal pieces and roll out each one to the size of a small plate. In a medium bowl combine the zaatar mix with the remaining olive oil so that it creates a smooth black mixture. Then divide the mixture evenly among the four doughs and spread it out evenly, almost to the edge of the dough. Then bake them for eight minutes and serve warm or cold.
